WHAT!! Where have I been?

Hi guys!  Remember me?  It is Yaitza (pronounced Jaheetsa, in case you forgot) how the heck are ya? It has been a while since my last blog post and I have been missing you guys. I hope you are all doing well.  

Where have I been?  If you follow me on social media (if you don't, you should, links are on the side bar >>>>) you know that I was working diligently in finishing school.  Last week was the last week of school and naturally I have been wanting/craving to start sharing on this platform.  Being a "healthy lifestyle blogger" was such a big part of my day/life and I truly missed it.  I hope to start sharing on a weekly basis again.  I do not have a set schedule in mind, I am just going to share when I want to.  Ok?, ok!

Thank you so much to those of you who took the time to email me and that continued to stop by and support this platform.  You are too sweet and I missed you too!!!

Although, I have not sat down to type a blog post in over 6 months yikes!  I have been pretty active over on my YouTube channel.  You should subscribe to it here, it's free!

Anyway, if you have watched, then you know that my family and I have made the transition to Veganism and we are loving every aspect of it.  If you want to know what inspired this awakening of the minds you can watch my reasons for switching to a Vegan lifestyle here or below ;o)

In short we are vegans for pure ethical reasons... We choose to be vegan for world hunger, the planet and the animals and I tell ya, it has been the best decision we have ever made. 

We have been on this journey for over three months now.  Consequently, I have been super duper creative in the kitchen.  I am so excited to share healthy plant based recipes with you all and continue to share more lifestyle stuff.  I recently posted a What I Eat In a Day video sharing my meals and how I prepare them on my channel.  Check it out here or below!

So exciting! I joined Snapchat over the weekend, it is so much fun!  You can find me on there at ahealthyfitme, I have been snapping a few times a day, I am snapping my meals today.  Check it out!

Speaking of exciting things... We are heading for our annual Minnesota Cabin vacation with Joseph's (my hubby) side of the family in a couple of weeks.  We are road-tripping it again this year!! I'll be sure to share some snaps or even video logs of what we eat and how we stay active while traveling.  Sooooo looking forward to relaxing at the lake.  If you do not know what I am talking about, check out my vacation recap post from last year.  

I think this short update will do for now guys! I will be sharing more of my week in a couple of days!
