Paleo Blueberry Muffins

How's your Monday going so far?  I took a break from school work on Saturday, to prepare a little treat for my self.  After playing around with coconut flour, I ended up creating these babies and absolutely loved how they turned out!  Just thought you might want to give them a try too...

Paleo Blueberry Muffins!
I do not know about you, but baking or making anything with coconut flour used to be such as scary and intimidating task for me.  I have learned that the one thing to keep in mind when baking with coconut flour is that, a little goes a very long way, so if you mess up the recipe, it is not such a big waste of flour and you can always try again.

I have a video titled Coconut Flour 101, that breaks down the basics of baking with this complicated but delicious flour.  Check it out, if you are experiencing the coconut flour scares! 

2 medium mashed bananas
2 eggs
1/2 dropper of vanilla liquid stevia (optional)
4 tbsp of coconut oil
1/2 cup of unsweetened apple sauce
2 cups of fresh blueberries
1/2 tsp lemon zest
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/4 tsp salt
1/3 cup of coconut flour
1/4 tsp of baking powder
1/4 tsp of baking soda

Preheat your oven to 350 degrees.  Spray and line a muffin tray with baking spray.  Combined all wet ingredients in a bowl and mix well.  Add in your dry ingredients (except for the blueberries, those suckers get dumped last) in to the wet ingredient bowl, and mix until well combined.  Add in your blueberries and mix until they are incorporated but still hold their shape.  Bake for 55-60 minutes.

Allow the muffins to cool completely on tray.  Transfer the muffins into your fridge for an hour prior to eating.

Macros per muffin (mixture makes 12): 90 calories, 6g fat, 9.8g carbs, 2.1g protein.
