I have been baking a loaf of my Paleo Banana Bread every Sunday during meal prep. It is essentially a version of my Paleo Banana Muffins except, it is in bread form. Joseph has been loving it, so naturally, I had to share the recipe with you all...
3-4 medium ripe bananas (mashed)
1/3 cup of melted coconut oil
1/3 cup of coconut flour
1/3 cup of crushed walnuts
2 tbsp. of dried no sugar added raisins (optional)
1 tsp of vanilla extract
2 tbsp. of coconut sugar or brown sugar
1/4 tsp. of salt
1/2 tsp of cinnamon
1/4 tsp. of baking soda
1/4 tsp. of baking powder
Preheat your oven at 350 degrees. Spray a bread pan with baking spray. In a large bowl combine your mashed bananas and the rest of the wet ingredients with a hand mixer or with a fork. Once the wet ingredients are well incorporated, add in your dry ingredients and mix until well combined. Add in your mixture to your bread pan.
Place the pan in the preheated oven. Bake for 60-70 minutes, rotating the baking pan half way through the baking process. After 60 minutes do the inserted fork test, trust the fork test, even though the bread make feel like it needs more baking time. Let the bread cool completely and placed in the fridge for an hour to properly set before serving.
