A lighter Cole Slaw...

It's beginning to feel a lot like summer!  Summer for us includes grilling out and having friends over to enjoy the sunny days outdoors.  Whenever we attend a BBQ, side dishes with heavy sauces are always on the menu.  I wanted to create a lighter version of a classic, to bring with me next time we attend a BBQ.

Anyway, that's enough chatting...  Here's my lighter Cole Slaw recipe!

1/2 of a large green cabbage (cut in to small strips)
2 large carrots (grated)

2 tbs. of onion (grated)
2 tbs. of greek yogurt (I used a lactose free one)
2 tbs. of Vegenaise (or mayo of your choice)
2 tbs. of apple cider vinegar
1 tbs. of water
1/2 tbs. of Truvia
1/4 tsp. of garlic powder
salt and pepper to taste

I start out with the dressing. Grate your onion using a cheese grater.  Add in the rest of the dressing ingredients in to a bowl and mix until well combined.  Place the dressing in the refrigerator while you get your veggies ready. ;o)

  Cut your cabbage in to strips, grate the carrots, and place them in a large bowl.  Pour the dressing over the cabbage and carrot combo.  Mix until well combined.  Add salt and pepper to taste.  Place the cole slaw in the fridge for 1-2 hours to allow it to set.  Give it a good toss before serving!  Feel free to give it a taste and adjust salt and pepper taste to your liking.

Fun fact:  I sometimes add cranberries to my cole slaw... Is this weird?
