Piña Colada Popsicles

If you look around the blog you will find a ton of homemade looking recipes that do not necessary scream Pinterest approved!  That's because I genuinely share recipes that I eat and make for my family.   If I had the time and motivation I would definitely take a course on food photography.  While these may not look like they came out of a magazine, they taste amazing and I hope you like them as much as we do.

In the spring/summer time, we love indulging in frozen treats to keep us hydrated and our sweet tooth satisfied.  I have made these popsicles twice this month and wanted to share the recipe with you all.

Piña Colada Popsicles

1 cup of canned coconut milk
an inch of fresh ginger (peeled)
1-2 tbs of raw coconut sugar (agave nectar or sweetener of your choice)
1 tbs of ground flax seeds
1 cup of frozen pineapple
2 tbs of unsweetened dry coconut
a pinch of cinnamon

Popsicle molds or small Dixie cups
Throw all of the ingredients in a blender and blend until well combined.  Pour your mixture into Popsicle molds or small Dixie cups (makes about 6 Popsicles.)  Place in the freezer for 8 hours or overnight.
I do not know how it is in your home, but Popsicle molds are like bobby pins; where the heck do they disappear to?  Is there a popsicle mold fairy that comes at night and stills them from my kitchen drawer?  Hmm, I am assuming they get thrown out whenever the child leaves the house with a Popsicle at hand... I'll never know, I'll never know...
