Gluten Free Faux Macaroni & Cheese

The weather has been gloomy, rainy, and cold here in Colorado.  Nevertheless, I do not mind it at all because I love the smell of rain, plus our grass and plants desperately need it.  Consequently, Joseph and I can literally eat soup every night of the week, especially when the weather makes you crave something warm and cozy.  On the other hand, my son Christian is getting tired of soup at the moment and was craving something warm, but a bit more savory and on the indulgent side.  

I rarely make two different meals for dinner.  Whatever I cook is what's for dinner, no exceptions!  I put a menu together at the beginning of the week and I make sure that it is suitable for everyone in our home.  On this particular day, I was feeling generous AKA needed to get rid of some leftovers and agreed to make Christian something different.

In comes my Faux Mac & Cheese...  FYI!  Christian encouraged me to share this recipe with other moms so that they can make it for their kids. Well, after that strong statement, I think it is safe to say that this recipe is kid approved!
Ingredients:
2 cups of uncooked quinoa pasta (or pasta of your choice)
1/2 cup of 100 % pure pumpkin puree
2 tbsp. of grass fed butter (or ghee)
2 tbsp. of reserved pasta water 
2 tbsp. of nutritional yeast
1 cup of baby spinach
salt and pepper to taste

Directions:
Cook your pasta per package specifications.  Once pasta is cooked, strain but save 2 tablespoons of your pasta water.  In a bowl, combine your pasta with the rest of the ingredients, including pasta water, and toss until well combined.  Taste, and feel free to adjust salt and pepper to your liking.

This is a great side to pair up with grilled chicken and steamed broccoli.
