Spring Time Recipes

Spring is here, and it is one of my favorite seasons!  I have been enjoying the sunny days and warmer weather here in Colorado.  My favorite thing about Spring time is workouts outdoors, re-opening of Farmer's Markets, and the freshness and availability of many more varieties of fruits and vegetables.

 I wanted to put together a small list of "go-to" spring recipes that I bet you have seen all over Pinterest but had no idea that they came from this humble blog.

 These are spring staple recipes in my kitchen that will hopefully soon become staples in your kitchen as well!
  • Just like Panera's Iced Green Tea: This is my most viewed and pinned recipe of all time.  This recipe won a Best of 2014 award from the All Free Copycat Recipes website!  If you are a long time reader of my blog, then you know this is a staple for us.  You will always find a pitcher of tea in my fridge when spring and summer come around!

  • Chia Pudding or Overnight Oats: Two of my favorite go-to breakfasts during spring time.  Sitting in front of a hot stove is not appealing to me. As we slowly approach warmer weather, this is a great way to have your breakfast prepared in advance for those busy mornings.  You can serve this cold or microwave it for a minute or so if you want to enjoy them warm.
  • Fritattas: Possibly my favorite lunch in the spring.  I like to keep the egg base the same for my fritattas but use a different variation of vegetables depending on the season.
  • Coconut and Pineapples smoothies:  I am an island girl at heart!  My favorite smoothies consist of coconut water and frozen pineapple chunks in the spring time.  They are super refreshing on a hot spring afternoon, and also great for breakfast!
  • Couscous , Quinoa & Roasted Veggies Salads:  These are great dishes when entertaining, and my husband is especially fond of the couscous one.  Any combination of dried fruit or veggies pair great with these.  They are easy to prepare and are always a hit with everyone.
  • Watermelon & Mint Paletas or Popsicle: This is a family favorite.  We like to end our nights on a sweet note.  Frozen fruit in the form of a Popsicle is an excellent alternative to ice-cream.

Weather you are entertaining a crowd or simply cooking for your family, these are great and easy recipes to make healthy eating exciting and delicious at home.

  3. Okay, so I really want to get into Chia seeds but I seriously have NO idea where to start. I'm going to try your recipes and see how it goes!

    1. try it you'll love it... Key to me is for every 1/2 cup of liquid I add 1 tbsp of chia seeds and of course oats.. ;o)

  7. Yummy recipes.. But how do u get by the taste of overnight oats? I tried it before and I couldnt stand how cold it was and what not.. my husband mentioned maybe heating it up but idk.. thanks for sharing!

    1. you can microwave it for about a minute or so... just watch in while in the microwave so they do not over flow out of the jar... ;o)
