I wanted to share one of my favorite things to have for lunch, as of lately. As the weather gets warmer, I crave salads for lunch. I like my salads with tons of leafy greens and a serving of complex carbohydrates, protein, and tons of other veggies. I dislike how boring store and restaurant bought salads are. I love adding different veggie components to my salads which provide crunch, flavor, and texture. I also like them big, huge, massive, or gigantic... I am sure you get the idea! ;o)
This particular salad features a couple of healthy grocery finds that I have been loving at the moment.
I mentioned these two items on my latest "What I ate today" vlog. FYI, I buy the Wild Alaskan Salmon Burgers at Costco.
I recognize that this is a super simple salad. However, I have been loving this combination for lunch and I wanted to tell you about it!
2 cups of kale (I remove leaves from stems and chop)
2 cups of baby spinach (chopped)
1 cup of cooked quinoa
1 Salmon Burger cooked (on a coconut oiled skillet, 2 minutes each side at medium heat)
1/2 cup of chopped celery
1/4 of a small purple onion (finely cut into strings)
5 grape tomatoes diced
2 medium size white mushrooms (cut length wise)
1/4 cup of chopped roasted red bell pepper (from a jar)
2 tbsp. of capers
2-3 tbsp. of Trader Joe's Balsamic Vinaigrette dressing
No directions! I prepare my quinoa and burgers during my Sunday food prep, therefore this salad requires assembly only. I literally throw everything in a bowl and then toss them together.
It is crazy how dedicating a couple hours of food prepping on Sundays can save you so much time and effort for meals during the week!
Eating healthy does not have to be complicated. Find a variety of vegetables, fruits, lean protein, and complex carbohydrates that you love, and use them to spice up your meals. Read food labels and ingredient lists on grocery store items that sound good to you, and find healthier alternatives so that you do not get bored of eating the same things day-in and day-out.
