Oven Roasted Potato Medley

Are you an oven roasted potato lover?  We are roasted potato fans!  I make these at least twice a week.  It is a quick and easy way to get those starchy carbohydrates in.  Hubby and I love sweet potatoes, and my son tends to enjoy white potatoes more.  I introduced sweet potatoes to him by cooking them the way I enjoy eating them; ROASTED.

I like to combine both white and sweet potatoes, this way we all get a bit of the things we love and enjoy to eat.  Roasting, is an easy way to introduce sweet potato newbies to their amazing taste.  My intention is to eventually take the white potato completely out of the equation but, for now, this mix is working for us. ;o)

Oven Roasted Potato Medley

2 small white potatoes
2 large sweet potatoes
2 tbsp. of olive oil or coconut oil
1 tbsp. of salt 
1 tbsp. of pepper
1/2 cup of fresh dill

Preheat your oven to 425 degrees.  Peel your potatoes.  I partially peel mine, we are potato skin lovers here!  Cut your potatoes in rounds and quarter each round as shown below.
Place your potato quarters in a bowl.  Add in your oil and half of your salt and pepper to the potato bowl.  Give the potatoes a good mix and transfer them to a baking tray.  Place potato tray in the preheated oven.  Cook the potatoes for 30-35 minutes, turning the tray half way through the cooking process, to ensure even roasting.
After 30-35 minutes safely remove potato tray from oven. Season the potatoes with the remaining salt and pepper.  It is important that you season the potatoes while they are steaming HOT!

 Let the potatoes cool for 5-10 minutes. Give the potatoes a final toss and sprinkle in fresh dill over the potatoes.
Serve and enjoy!

  8. I could seriously eat potatoes every day. I never used to like sweet potatoes but I have been trying to eat them more than white potatoes since they are healthier. I'll give this a try!
