How to: Hard "Boil" Eggs in the Oven

Before I get started, I wanted to say Thank You to all the people who left positive comments and Pinterest shares on my Oven Roasted Potato Medley recipe.  A couple of you have already tried it and loved it.  I can not express how happy that makes me feel.  Thank You!

On to today's post...  I am the worst when it comes to hard boiling eggs.  Anyone else? No, No.. OK, then!  
My stove top method is always difficult to peel and when you finally accomplish peeling them, the eggs end up with that ugly disgusting gray ring around the yolk. 

I have been loving a "new to me" process of hard boiling my eggs and I wanted to share it with you. No pots or boiling water necessary and most importantly; It is Mr. Egg Approved!

 Here's what you'll need:
a 12 spot muffin tray
12 eggs
an oven
a large bowl of ice water
a container to place your hard boiled eggs in
water

Directions:
Preheat your oven to 325 degreesYes, we are baking these suckers!  Place 12 eggs into a muffin pan.  Fill each spot of your muffin pan, about half way in, with water.  Once your oven is preheated, place your egg tray in the oven and bake for 30 minutes.
 After 30 minutes, carefully remove eggs from oven.  Add eggs into a bowl of ice water.  Allow the eggs to swim and cool for 5 minutes.
 Remove eggs from water and start the egg shell removal process.  Although the eggs look a bit spotty from the baking process, it does not affect the texture nor the taste of them.  These will peel like a dream!  I like re-purposing the egg carton to store my now, hard boiled eggs.
 These will stay fresh for up to 5 days in your fridge.  Perfect addition to your Meal Prepping Sundays!

If you are wondering where that missing egg from the carton went... Well, it had a little accident in the peeling process so... I ate it!  No worries, it gave me a chance to gladly inform you that there were NO gray rings in sight. Success!

  1. I have never been a fan of hard boiled eggs, but I know a lot of people are so I should probably learn how to make this for when I have guests over!
