Protein Mug Cake & Current Favorite Protein Bar

So, a few of weeks ago I shared this photo via Instagram.  I received a lot of Ooohs and Ahhhs on this particular photo, so I figured I share the recipe with you.  However, I should warn you that it is just a simple Protein Mug Cake people.. lol It is nothing special!
 I hesitated to share because, there are so many variations of protein mug cakes out there, but, some of you guys wanted to see how I make mine, so here it is!

I use a brown rice protein concentrate which is unsweetened.  I add a bit of stevia to mine, however, if your protein powder is already sweetened you can skip this step.

 Super easy right!  As convenient as it is to make this as dessert, I love to add my own toppings to it.  I usually cut my mug cake into four slices and spread a tablespoon of sunflower seed  butter over the slices.  Then use whatever fresh fruit I have at hand... I have been loving strawberries lately!
I have my mug cake at night as a light dessert.  I am always craving something sweet after dinner.  This is a great low carb alternative.

Now, as a morning snack, I have been loving the new flavors from KindBars.  They recently came out with sweet and savory combos and I have to admit that I am a big fan of all of them.  These new bars from Kind, are a bit larger in size, with a bit more calories, less sugar and more protein.  So good, and they are always on sale.  I highly recommend them! ;o)

  1. This looks yummy! I like the KIND bars as well. I think the ones I normally get are dark chocolate and almond or peanut butter.

  8. Great idea! I never thought of a healthy mug cake! We try not to snack... but if I did, it would be something too high in carbs!

  9. I keep meaning to try more healthy mug cakes when I get a craving! Sometimes Stevia gives it a funny taste for me, but I love your idea of spreading a nut/seed butter on the inside with some berries! Pinning:).

    1. I use a concentrate no sugar added protein powder so I need a sweetener. 2/8 of a tap does the work. I agree that when you use too much stevia the taste can become a bit bitter. Less is more with stevia :)
