Easy Mexican Inspired Eggs

Today I wanted to share a simple Mexican Inspired Egg recipe.  This is a great breakfast idea when you want to impress your family or guests.  However, we tend to have these for dinner when my fridge is looking a bit empty.  I love pairing these with a side of veggies and a serving of my Mexican Couscous Salad 
The combo is perfection!

The ingredients are so easy and simple, I am sure all of you healthy eaters have them sitting in your fridge right now. ;o)
Mexican Inspired Eggs
1 red pepper (diced)
1 small yellow onion (diced)
8 eggs
1 cup of your favorite salsa or marinara sauce
1 cup of water
Salt and pepper to taste

Place a large skillet onto stove top and preheat at medium heat.  Spray your  skillet with cooking spray add in your diced onion and pepper.  Season with salt and pepper and saut√© until onions are translucent.  Add in your salsa, stir and bring mixture to a simmer, this should take about 5 minutes.  Once your salsa has thicken out a bit add in your water.  Stir and bring to a low boil.  Taste your mixture and adjust salt and pepper to your liking.

Add in your eggs, one by one around the skillet, using the skillet as a guideline (like in the photo). After you have placed all of your eggs in, lower the temperature to low and cover your skillet with a lid.  Let the eggs cook in the covered skillet for about 5 minutes.  After 5 minutes, turn off your stove.  You are looking for the eggs to set and be completely cooked.

That's it!  You are ready to serve and enjoy!

Like I mentioned above, I love pairing these with couscous and a side of veggies but, feel free to use brown rice or any complex carb for an easy, cheap and delicious meal.
