Local Weekend Fun!

Happy Monday!  Can you believe there's less than 30 days until 2015????  Crazy times...

Before we start chatting about the weekend I thought I would share my breakfast smoothie with  you.  It is a variation of my Green Smoothie recipe HERE except, I added beets and grapes instead of berries.  I have been enjoying this combo for breakfast lately, beets are delicious in smoothies because they are naturally sweet.

On Saturday my family and I headed to Colorado Springs for the Festival of Lights Parade.
Our night began with a stop at our favorite coffee shop Rico's Cafe & Wine.  Joseph had his double shot espresso on coffee, Christian had hot cocoa and I enjoyed a massive cup of their delish unsweetened matcha almond latte.  I love that they offer dairy free options and stevia as their only calorie free sweetener (which I added to my tea,) instead of those chemical enhanced sweetener choices.


We all love this place so much!  The coffee shop offers live music on Friday nights and it is connected to a toy store, a restaurant as well as book store if you wish to enjoy your coffee while reading a book.  We have been known to spend hours at Rico's with friends, chatting the night away!

After book browsing and delicious hot drinks, we headed to look for the perfect parade spot. We were excited, this was our first time attending the parade.

The Festival of Lights Parade is a yearly Colorado Springs fun and free tradition where locals gather up to enjoy the floats businesses put on.    There were dozens of floats all lit up with Christmas lights, along with High School & Army, marching bands.

The parade started at St. Vrain, ran south of Tejon, running to Vermijo. 
The Colorado Springs downtown streets were shut down for us to enjoy the hour long parade.  My favorites of the night were; UCCS float, Chik' FilA float, CocaCola trucks, the cast of Frozen, (not on photo,) and all the marching bands. 
We had a great time watching all the kiddos enjoying the parade.  Note to self for next year: bring blankets and camping chairs.  We learned from watching all of those parade veterans this year.  LOL!

It was a cold night and my pleather boots of choice were not keeping my feet warm.  We were starving after the parade and decided to head North of Powers to our favorite small mama papa's place for some delicious Mediterranean food.

We frequent the Greek Cafe on N. Powers all the time often, the owner Said, adores my hubby Joseph.  It truly feels like we are visiting friends every time we visit the restaurant.

Normally, hubby and I share this massive masterpiece but, we were especially hungry this time and decided that sharing was not an option. This is the standard/only salad size guys!  Joseph ordered the Gyro Salad with double gyro meat, and Christian enjoyed the kids gyro plate.

We then headed home to watch the Polar Express and Santa Claus 3.
This is my idea of a perfect December Saturday night... I hope you guys had a great weekend too!

  6. I have NEVER had beets in my smoothie before. I do love beets, but they taste so "earthy" to me...does it give the smoothie an odd flavor? Looks like a fun weekend. I love parades! :)

  12. I just switched from Equal to Stevia. I heard so many bad things but it was a habit I couldn't break while out at restaurants since most don't have Stevia. Now I bring my own!
