The Easiest!: Crockpot BBQ Chicken

It happened on a football game night (Chistian's game,) I only had 30 minutes to get something in the crock-pot to be able to have dinner ready by the time we got back from the game.  I was nervous about it, but the concoction turned out to be a beautiful thing

This was one of those recipes that I literally, threw together on a busy afternoon using what I had on hand.  It was so popular with the hubby and child that it now has become part of our weekly menu

Now, I am big planner but, this just goes to show that the best recipes are made without a plan.

I love this recipe because it requires only a few  ingredients that most people (or red wine drinkers) have at home.  I love fool proof "go-to" recipes like this, and all crock-pot recipes in general.  Throw everything in there, forget about it, and a few hours later; DING, DING, BOOM, dinner is ready!

 I just had to share it with you... ;o)

Crock-pot Pulled BBQ Chicken

Ingredients:
3 chicken breast
1 cup of red wine
1 1/4 cup of your favorite BBQ sauce
1 small white onion (cut into wedges)
1 tsp. of salt
1/2 tsp. of black pepper
1/4 cup of water

I also used...
a medium size crock-pot
measuring cups & spoons
2 forks (to pull chicken apart)
a large wooden spoon
 Directions:
Turn on your crock-pot to high.  Place your chicken breast in the crock-pot.  Sprinkle in your salt and pepper over the chicken.  Throw in your onion wedges and pour in your wine and BBQ sauce.  Cover your crock-pot and let it cook for 4 hours, NO PEEKING!  lol

After 4 hours, pull apart your chicken breast with the help of two forks.  Add in your water and stir it around with a wooden spoon, make sure you get all that brown yumminnes that usually builds up on the sides.   Change your temperature to warm until you are ready to serve.

Easy, right? Enjoy!

This is a great recipe to throw together on a football Sunday, when unexpected guests arrive.
We love serving it along side brown rice.
 I know I always say this... But, please, please give this recipe a try, you and your family will love it!

  2. This looks amazing! I'm so hungry, hahah! I actually have spent the last two years without a crockpot and was, at times, so sad I did not have one. My mom just let me pick one out for Christmas, I'm so excited and as soon as that crockpot is unwrapped you KNOW I'll be trying this recipe out!!

  4. What can I sub for the wine? I don't drink it, so I don't buy it, and I wouldn't know the first thing about choosing one.

    1. You can use beer, water, a veggie or chicken stock instead. Hope this helps!
