We all love mashed potatoes and frankly there is nothing wrong with that. However, if you are watching what you eat or simply prefer a less starchy "low carb" side to your BBQ dinner, I highly recommend you try out my Mashed Cauliflower recipe!
Here's what you'll need:
Steam your cauliflower anyway you prefer. I added about 5 cups of water into a pot and placed it in my stove top to boil. I used frozen cauliflower which I steamed in a "steam pot" over the boiling water for about 20 minutes.
In a food processor add in your herbs, garlic and capers. Add in your steamed cauliflower and season with salt and pepper. Turn on your food processor and blend until you get a rice like consistency and the mixtures is no longer blending. Help out your food processor with a spatula as shown below. At this point, give it a taste and adjust salt and pepper to your liking.
Place lid on food processor and turn on to blend. While the cauliflower continues to blend, add in your coconut oil and slowly pour in your chicken broth. Continue to blend until you have reached a mashed potato consistency. Use your spatula to help scoop out all that mashed cauliflower goodness.
Serve and Enjoy!
