Happy Friday! I hope you are having a great week. My week has been full of fun workouts and healthy meals. I have to say that my favorite meal of the day this week has been breakfast. I love how you can start your day with something sweet or something savory; the world is your pickle.
I am a creature of habit, when I find something that I love I tend to stick with it. To be honest I typically have the same thing for breakfast, and it usually consist of eggs, fruit, veggies and/or a complex carbohydrate.

This week I have been on a sweet kick and thanks to farmers market deals, I have a ton of bananas in my fruit bowl. We love bananas and how versatile they are for baking, (hence, recent banana muffin recipe) as a sugar replacement in recipes, we love the creaminess they add to smoothies, etc.
This week I have been loving bananas in pudding form.
Here's what I did!
Banana Chia Protein Pudding
1 medium size banana (diced)
1/2 of a scoop of your favorite vanilla protein powder
1 tbsp. of chia seeds
1/2 tsp. of ground cinnamon
1/4 tsp. of salt
3/4 cup of unsweetened almond milk
stevia or sweetener of your choice (to taste)
a mason jar or any container with a lid ;o)
This recipe requires assembly only. You are going to place your diced bananas, chia seeds, protein powder, cinnamon, salt, and stevia into your mason jar. Add in your almond milk and stir. Give it a taste to check for sweetness and adjust to your liking. Cover your mason jar with a lid and refrigerate for 8 hours or overnight.
It is important that you refrigerate for at least 8 hours you need to allow those chia seeds to expand and give you that pudding like consistency. ;o)
I love preparing it before heading to bed and having it the next morning for breakfast.
