Last Minute Dessert Ideas for The 4th of July!

Hi!  I hope you are having a great day.  The 4th of July is only two days away.  What are your plans for Independence Day?  Are you hosting a BBQ?

Today I wanted to share two easy, last minute recipes that you can literally throw together a few hours before your guests arrive. These are both dairy free and require just a handful of ingredients.

First!  My Dairy-free 4th of July Ice Cream Sandwiches

You are going to need:
a pint of vanilla maple Arctic Zero (use ice cream of your choice)
8 Italian Waffles cookies
blue and red sprinkles
a serrated knife

Directions:
 Use your serrated knife to cut your ice cream pint in to four circle pieces.  Make a sandwich with your waffles cookies, as shown above.  Decorate the visible part of your ice cream sandwiches (ice cream sides) with your red or blue sprinkles.  Place the sandwiches in the freezer until you are ready to serve. ;o)

Recipe #2: Red white and blue-ish Popsicle (or Parfait)
You are going to need:
1 tbsp. of organic coconut sugar
1 full drop of vanilla stevia (or sweetener of your choice)
1 12 oz. packet of organic firm tofu
1 tsp. of vanilla extract
6-10 large strawberries
1 cup of fresh blueberries
4 tbsp. of water
4 jumbo size straws (cut in half)
8 5oz. Dixie cups
Directions:
Wash your fruit and cut off your strawberry leaves.  In a blender, add in your strawberries and 2 tablespoons of water.  Blend until well combined.  My strawberries were pretty sweet, I did not need to add sugar for this step.  Pour the strawberry mixture in a bowl, set aside and rinse your blender.  Add in your blueberries and 2 tablespoons of water to your blender and blend until well combined.  Pour your blueberry mixture in a bowl and set aside.  Rinse your blender. ;o)

Next, add in your tofu, coconut sugar, stevia and vanilla extract into your blender.  Blend until your mixture becomes the texture and color of vanilla pudding.  Pour your tofu mixture in a bowl and set aside.

Time to build your Popsicles!  Pour in 2 tablespoons of your strawberry mixture into each Dixie cup.  Insert a half of your jumbo straw in the center of the cups (this is your Popsicle stick,) and place in the freezer for one hour.  After an hour, remove your cups from the freezer and add in 2 tablespoons of your tofu mixture into each cup.  Place back in the freezer for one hour.  Finally, remove your cups from the freezer and pour 1 1/2 tablespoons of your blueberry mixture into each cup.  Freeze for 2-3 hours.

Remove plastic cups when you are ready to serve and... enjoy your Popsicles!

 You also have the option of making a parfait with these ingredients.   If you decide to parfait-it, go ahead and chop up your strawberries and add to the cups.  Next, add in your tofu mixture.  Finally, top your Dixie cups with blueberries. Refrigerate for 2 hours prior to serving.
Enjoy!
Garnish your serving platter with fresh strawberries and blueberries.
