Banana Coconut Morning Colada

Happy Thursday friends!  I am having one of those mornings where all I want to do is go outside and enjoy the day.  Unfortunately, the weather in Colorado (or at least in my neck of the woods) has been well,
like THIS...
 Seriously, what the heck Colorado!  Don't you know this kind of weather was the reason we left Alaska???!!! well we moved, due to military orders etc, but who's counting.
We still love it here, though ;o)) 

In order to transport myself to warmer weather, and to pretend I was in Sandy Beach FL sipping on a cocktail... I decided to make myself a virgin COLADA, served in a wine glass!
 Yep, I was desperate...

Banana Coconut Morning Colada
Ingredients:
1 cup of unsweetened almond milk
1/2 cup of coconut water
1 banana
2 tbsp or 20 grams of young coconut meat (or unsweetened shredded coconut)
1 scoop of vanilla brown rice protein powder (I used Growing Naturals)
5 drops of vanilla liquid Stevia (Truvia or sweetener of your choice)
1 cup of spinach (optional)
1 cap full of rum extract (or 1 oz of white rum)
Disclaimer: I have nothing against Rum, except it was 6 am in the morning.
1 cup of ice

Directions:
You know what to do!  Throw it all in a blender and blend for 1-2 minutes.
Pour and serve your Colada in a cocktail or wine glass (a mug, whatever is closest to you.)

Now, turn that fireplace or gas stove on, close your eyes and pretend you are at the BEACH!
 ENJOY!
