Baked Stuffed Peppers

Happy Tuesday!  I hope you are having a good week so far.  I made these the other night for dinner and could not resist sharing with you all.  I hope you give this super simple recipe a try.
What you'll need...
for filling...
1 pack of lean ground turkey (I used a 19.5 ounce pack)
1/2 of a grated or pureed yellow onion (on cheese grater)
2 tbsp of garlic
1 tbsp of MCT oil (or extra virgin olive oil)
1 tsp of sea salt
1 tsp of freshly ground black pepper
1/2 tsp of garlic powder
1/2 tsp of dried parsley
1/2 tsp of dried oregano
1/2 tsp of dried sage
1/2 tsp of poultry seasoning

Bed for filling:
3 bell peppers cut in half (length) washed and pitted 
1/2 cup of marinara sauce mixed with 1/4 cup of water

Super simple directions:
  Combine the ingredients for the filling in a mixing bowl, and mix until well incorporated.  Cover, and leave in the fridge over night.  The process of refrigerating over night is going to help your turkey marinade and the onion puree will make your mixture moist.

The next day...  Preheat your oven at 375 degrees.  Cut your 3 bell peppers in half (length size.)
Spray a baking sheet or a tray with cooking spray.  After you clean your peppers, start filling them in with your turkey mixture. Use 1/2 of your marinara sauce and water mixture to create a bed for each pepper on your cooking tray.  After placing peppers on tray,  spray or drizzle each peppers with oil and season with a bit more salt & pepper over top.
 Bake for 30 minutes.  After 30 minutes, remove from oven and pour in the reminder of the marinara sauce over all or some of  the peppers.  I prefer mine without sauce ;o)!
  Place back in the oven for another 20-25 minutes.  After the peppers have finished cooking, let them rest for about 10 minutes.

Serve along your favorite veggies and enjoy!
