Baked Balsamic Chicken

Happy Monday!  Hope you had a great weekend.  We had an amazing dinner last night and I wanted to share the star of my dinner plate with you all.  It is healthy, juicy and delicious but most importantly it is WholeFoods-NoCrap Challenge approved.
Here's what you'll need!

 Baked Balsamic Chicken!

For Marinade!
1/4 cup of balsamic vinegar
1 tbsp. of extra virgin olive oil
2 garlic cloves (minced)
1/4 tsp. of ground ginger
1/2 tsp. of dried basil
1/4 tsp. of sea salt
1/4 tsp. of ground pepper
1/2 tsp. of dried oregano
1/2 tsp. of garlic powder

The Star!
4 chicken breast
1/4 cup of parsley (for garnishing)
baking dish

Combine all of the marinade ingredients in a small bowl and mix well with a fork or a whisk.  Place your chicken breast on a baking dish and pour in your marinade.  Make sure that both sides of the breasts are well coated with the marinade.  Cover your chicken with aluminum foil and place in the refrigerator for at least 2 hours prior to baking.  For a more flavorful meal, marinade your chicken overnight!

Preheat your oven at 400 degrees.  Place your chicken in the oven uncovered for 15 minutes.  After 15 minutes, remove some of the excess liquid from the chicken breasts and marinade, set it aside, reserve that liquid, DON'T YOU THROW IT AWAY!!! lol
 Flip your chicken breasts to the other side so that both sides cook evenly.  Place your chicken back in the oven for another 15 minutes.

After your chicken has cooked for a total of 30 minutes, remove from oven and cover your baking dish back with aluminum foil.  Let the chicken rest for about 5-7 minutes prior to eating.

That's it, your chicken is ready for your enjoyment.  Garnish your dish with fresh parsley and serve along your favorite veggie!

OOOh!  Don't forget to pour some of that amazing chicken marinade drippings over top!
