Hi! I hope you are having a good day. I had these today for breakfast and they were delish! I love incorporating wheat bran into my breakfast, such a great way to get your fiber in. My favorite way to have it is in the form of pancakes! I have shared a few pancake recipes with you, since they are a breakfast favorite, I figured I would share this Banana-Wheat Bran one with you!
1/2 of one large banana
1/4 cup of wheat bran (I used Hodgson Mill Unprocessed)
5 egg whites (not the liquid substitute kind)
1/2 tsp. of baking powder
1/4 tsp. of salt
1 tsp. of vanilla extract
1 1/2 tsp. of baking Truvia (or sweetener of your choice)
1/2 tsp. of ground cinnamon
1/4 tsp. of nutmeg
Blend all of the above ingredients in a blender or a magic bullet until well combined. Spray your pan with cooking spray and preheat at medium-low heat. Once your pan has preheated, pour in your mixture and cook them just like you would a regular pancakes. Wait for those bubbles to form and flip them (about 2 minutes each side.) Enjoy!
