Beautiful Protein Pancake Mistake!

Happy Saturday!  If you've been reading for a while you know that I typically have some sort of hot cereal and egg-whites for breakfast, normally I have oats.  However, this morning while attempting to make my beloved "oat-bran" cereal, I noticed that the consistency was not the same, it was darker, tasted differently and just was not cooking nor getting smooth.  I thought it had gone bad so, I decided to take a look at the packaging of my brand new "oat bran" for the expiration date and to my surprise the date was good.  I kept cooking my oat bran, and still not working!  I took a second look at the packaging and noticed that it was actually wheat bran not oat bran.  

So... what happens when you send your hubby to the store for oat bran and he brings you wheat bran (on sale,) and you have nothing else to eat... Nope, you do not send them back to the store, because he is at work! Yes, you make protein pancakes!

What I used:
1/2 cup of wheat bran
1/4 teaspoon of baking powder
1/4 teaspoon of salt
8 drops of vanilla liquid stevia (or a serving of any natural sweetener)
5 egg-whites (from real eggs!!)
1 tbsp. of coconut oil (melted or oil of your choice)
1 cap full of vanilla extract
a pinch of cinnamon
blender or magic bullet
cooking spray
a skillet
Directions:
Pour your ingredients into your blender and blend for 2 minutes or until well combined.  Preheat and spray your skillet at medium heat.  Pour your pancake mixture in to small size pancakes and cook each side for about 2 minutes, only flip you pancakes once.  
(this is one serving and makes about 8 small pancakes)

Top your pancakes with you favorite fruit and nut butter, and enjoy!
I know I have shared similar pancakes recipes on here lately.  However, what I feel makes this one extra special and worth sharing is the addition of coconut oil and bran.  You could omit the oil, but your pancakes will be a bit more on the dryer side, still good, just dry.  The wheat bran is so filling, and the bran flakes in combination with the coconut oil gives your taste-buds the illusion of actually having coconut flakes on your pancakes. 
 So very good!
