Hi! I hope you are doing well. I can not believe we said goodbye to Alaska almost a week ago! So many great memories and a lot of personal growth and learning happened there. We were glad to have had the opportunity to be Alaskans for 3 1/2 years. Sad to leave the experience but, we were so ready to leave the state, especially before the winter! 'o)
YEY! We are now in Colorado! We have been busy looking at houses and adjusting to this beautiful state. I have to admit that the transition has been quite fun and easy for all of us. We have always wanted to live here, so naturally we are enjoying every drive, every stop, all the friendly people and just feeling extremely blessed for the opportunity to be Coloradans...
The only thing that was a bit challenging was living in a hotel for the first few days. But, we made it to our temporary rental Monday night. I am thrilled to be out of the hotel and to finally have a kitchen and somewhat of a normal space to call home for the next 30 days. We have been busy house hunting and all that comes with moving out of state however, we have managed to stay healthy (with the occasional froyo) thanks to all the food prepping I did prior to leaving Alaska and thanks to places like Chipotle, Panera, WholeFoods and our favorite gluten-free and new fave dog friendly spot, Salsa Brava.
I shared this photo over Instagram yesterday but breakfast have consisted of the same for the last 6 days: oat meal or oat bran, egg whites and some fruit.
I have been working out per usual, the hotel had an awesome gym and so does the rental. I am doing my workouts in the mornings so that we can get what we need to get done during the day. I have been enjoying the morning workouts, keeps me energized all day.
