Sweet Potato-Nut Protein Bars

Happy Friday!!  Ok!  Remember this baby from a previous post....
It's a homemade protein bar, with greek yogurt on top!  

Delish combo!
 I think this recipe is super easy and basic for protein bars but, I posted a photo over Instagram and received questions for the recipe so I wanted to share what I did with you. 
Makes 10 large bars. Macros: 170 kcals / 10 g of protein / 15g of carbs / 3g of fat / 3g of sugar

2 cups of mashed sweet potato
8 droppers full of vanilla liquid stevia
4 large egg whites
1 cap full of vanilla extract
1/2 cup of unsweetened almond milk
4 oz of unsweetened apple sauce
1 3/4 cup of spelt flour
1/4 cup peanut flour (I used protein plus)
2 scoops of Protein Powder (I used PerfectFit)
1/4 cup of sunflower seeds (unsalted kernels)
1 tsp of baking powder
1/2 tsp of salt
2 tsp. of ground cinnamon
1 tsp. of ground ginger
a pinch of nutmeg
1/2 tsp. of ground clove

Preheat your oven at 350 degrees.  Spray a 9 x 13 baking dish with cooking spray.  Combine all of the ingredients listed above and place on your baking dish.  Bake for 30-35 minutes.  Let it cool for an hour.  Cut them into 10 large bars or 20 mini bars.
