Melonberry Cucumber Lime "Paletas"

I hope you are enjoying your weekend.  I don't know how the weather is in your neck of the woods, but it has been in the 80's here in Alaska!  I love it though, it reminds me of early FL sunny summer days.  If I close my eyes really tight, I can aaaaaalmost smell the beach.  LOL!

In order to stay hydrated, we have been relaying on salads, of course water, iced tea, smoothies and these delicious Paletas!  My son loves them!  He adores the fact that he can grab them and head back outside to play.  I swear I rarely see my child sitting inside the house.  After a brutal winter and spring, the kids on post are outside 12/7 making the most out of these hot summer days!

OK!  On to the "Paletas"...
Here's how I made this refreshing summer treat...

Ingredients:
1/2 cup of water
1/3 cup of fresh lime juice (about 4 small limes)
the zest of 3 small limes (about 1 1/2 teaspoons)
1 cup of sliced cucumber (peeled)
1 1/2 cups of  diced watermelon 
6 medium strawberries
10 Popsicle molds (you can use small dixie cups)

Optional:
sweetener of your choice (I used 20 drops of vanilla liquid stevia)

Directions:
Add the water to a blender.  Zest your limes, juice them and add to your blender.   Dice your watermelon, strawberries and cucumber and add to your blender.  Blend for 2 minutes, taste the mixture and add sweetener of your choice if you like, blend for another minute.  Fill up your molds and freeze for 5 hours or overnight.

Macros (serves 10): Kcals 16; Protein 0g; Carbs 4g; Sugars 2g; Sodium 1g.

This is the perfect guiltless summer treat!
