Garbanzo Salad W/ Poppy Seed Vinaigrette

Happy Thursday...  I don't know about you, but I can not wait for the long weekend ahead.  We have beautiful weather in the horizon and I intend to get out and play!
Summer is almost here and I can not wait for the warmer days and the flowers, and the trees/grass to turn green.  Fingers crossed, fingers crossed...

Speaking of green, are you a fan of meatless recipes?  We do meatless days a couple of times a week, and have been doing this for about a year now.  Everyone enjoys it at home and we all look forward to those days, especially me.  I love watching how my hubby and son enjoy eating the protein from whole grains and vegetables rather than from a big hunk of meat...

I love my boys! They try everything I make including those dishes that don't turn out so good...  They support me in every way.  They are truly the best thing ever!

Anywhosers, over the weekend I had some brown rice left in the fridge and a can of organic garbanzo  beans in the pantry and decided to go with a Garbanzo Brown Rice Salad for dinner.

In my Salad:
1/2 cup of cooked brown rice
1/2 cup of garbanzo beans
1 tbsp. of diced fresh cilantro
1 small cucumber (diced)
5 cherry tomatoes (quartered)
3 cup of fresh green salad mix (under)

Add all of your ingredients in to a salad bowl.

Poppy Seed Vinaigrette:
1 tbsp. of extra virgin olive oil
1 tbsp. of unfiltered apple cider vinegar
1/4 t. of salt (or to taste)
a pinch of pepper (or to taste)
1/4 t. of dry oregano
1/4 t. of poppy seeds
1/4 t. of garlic powder
a pinch of red pepper flakes

Add your dressing ingredients in to a small bowl and whisk with a fork.   Pour your dressing over the salad and toss!
Super duper simple!
Serves 1.  Macros: 379 kcal/52g carbs/17g fat/13g protein
