Oatmeal Raisin Pancakes

 You could have them plain like the hubby...

Oatmeal Raisin Pancakes

1/3 cup of Old Fashion Oats
3/4 cup of Egg-Beaters
2 tbsp. of no sugar added dried raisins
1/2 of a medium banana
1/4 t. of ground cinnamon
1/4 t. of baking powder
5 drops of cinnamon liquid Stevia (or 1 Truvia packet)
a pinch of sea salt

In a blender (I used my magic bullet) add in all of the ingredients except the raisins, and blend for 1-2 minutes. Once the mixture is well combined, add in your raisins.  Spray and preheat a pancake skillet at medium heat and start cooking your pancakes.  Pour 1/4 of your mixture into the skillet, wait until it bubbles before flipping with a spatula and cook the other side.

Or if you are like me and love your pancakes with syrup...
have them with strawberry syrup on top!
4 medium strawberries
1 Truvia packet
8 cinnamon stevia drops
1/2 cap of vanilla extract
1/4 cup of water
a pinch of cinnamon

In a small sauce pan add in all of the above ingredients.  Turn on your burner to low heat and cover pan.  Stir the mixture occasionally and adjust water amount if you need to.  Continue to cook at low heat until the mixture starts to thicken.  Should take about 5-8 minutes.  Turn off burner and pour over your pancakes.
