Crustless Turkey, Spinach & Blue Cheese Quiche

Quiche is slowly becoming our Sunday brunch staple.  It is the one thing I know for sure everyone will enjoy.  Also, it is a one dish meal that can feed my family (with left-overs for dinner.).  Another thing I love about making Quiche is that I can use pretty much anything I have in my fridge.  Any veggie combination works and it really requires assembly of ingredients only.  

You can also prep it ahead the night before and toss it in your oven the next morning.  Perfect for when you have guests.  Takes the hassle out of cooking and more time to entertain your guests.

Turkey & Spinach Blue Cheese Quiche
3/4 cup of egg-whites
3 eggs
1/2 cup of Silk Unsweetened Almond
1/4 cup of blue cheese
6 turkey slices
4 medium size mushrooms (diced)
2 cups of fresh spinach
2 tbsp of diced onions
1 minced garlic clove
1 tbsp. of nutritional yeast
1/2 t. of poultry seasoning
1/4 t. of garlic salt
1/4 t. of pepper
1/2 t. of salt

Pie or Baking Pan 
oil or cooking Spray

Preheat your oven to 375 degrees.  Spray a skillet with cooking spray or oil and turn on your stove burner at medium heat.  To your skillet add in your garlic, turkey slices, onions, mushrooms and season your mixture with salt and pepper.   You want to saute this mixture.  Once the onions are translucent and the mushrooms are done add in your spinach and a bit more salt and pepper.  Once the spinach has shrunk and it is combined with the rest, turn off burner and set this mixture aside.  

In a bowl add in your eggs, egg whites, milk, blue cheese, and the rest of your seasoning.  Mix well until the eggs are well incorporated.  Spray your pie pan and add in your egg mixture.  Add in your cooked veggie& turnkey mixture to your baking pan and place in the preheated oven for 35-40 minutes.

Once the quiche is set and fully cooked (test by inserting a fork in the center, should come out clean)  Set it aside for 5-7 minutes prior to serving or cutting.  

You should end up with something like this...
Serves 6.  Macros per serving: 87 kcal, 2g of carb, 4g of fat, 9g of protein, 1g of sugar
