I love salads: Hearty Roasted Veg-Salad

Hi!  I hope you are doing well.  I wanted to share a lil salad I have been enjoying for dinner lately...  YES, a salad!  Funny, I had someone ask me recently: "don't you get sick of having salads everyday"?    

WOOT???  I love salads, especially the different variations that you can do to spike them up.  
I could have this particular one everyday, all day and never get sick of it!

Ingredients:
 1 tbsp. MCT oil or Coconut oil (spray or melted)
3 oz. of cooked lean ground turkey (97/3)
1 large Portobello mushroom (big piece dice)
1 3/4 cup of broccoli florets (frozen or fresh)
1 cup of cauliflower florets (frozen or fresh)
3-4 cups of shredded lettuce
2 tbsp. of guacamole (I used store bought)
2-3 tbsp. of salsa (of your choice)
1 laughing cow cheese wedge
1 t. of garlic powder
salt and pepper to taste
Siracha (optional)

Directions:
Preheat your oven at 400 degrees.  On a baking tray, place your cauliflower, broccoli, and diced portobello mushroom and spray them with your oil.  Add salt, pepper and garlic powder to your veggies and place in the oven for 15-20 minutes.  

After your veggies are done assembly is the only thing left to do on this salad!  You want to add your lettuce to your bowl first and place your cheese wedge on top.  Then add in your warm/hot roasted veggies over top the cheese and lettuce (to help melt the wedge.)  Add in the ground turkey, guacamole and salsa on top.  
I always add Siracha to everything!

As you know I prep ahead for the week on Sundays therefore, I already had my ground turkey cooked, just needed preheating.  I seasoned the ground turkey with just salt and pepper and cooked it on a large skillet until brown.

BTW! I promise there's lettuce under all of those veggies...
Super filling and delish!
This salad had sort of a Mexican twist to it but, remember that you can roast whatever veggies you have at hand and use any protein on your salad.  I have added brown rice, lentils, beans, quinoa even a sweet potato to add a bit more protein & carbs when I need to.
