Valentine's Day Salad Dressing

What are your plans for Valentine's Day? Hubby and I will be cooking dinner together, sipping on a lil vino and watch a movie or two.  It will be like any-other day we spend together, really...  We tend to think that everyday should be like Valentine's!

 Anywhosers, I was watching the Food Network over the weekend and was inspired by all of those yummy chocolaty treats. 
Scrumptiousness...but no worries I had my raw chocolates in the fridge, to fix those wishing we had tastelevision weekend cravings...
In honor of the <3 DAY.. I prepared a Valentine's day inspired dressing to complement a strawberry walnut goat cheese salad we are planning to have with our meal tomorrow.  While the special ingredient is a Valentine's day classic, it is an unexpected but delicious pop of flavor in this dressing.  

1 tbsp. of unsweetened carob powder or unsweetened dark cocoa powder
1 tbsp. of Dijon mustard
1 tbsp. of honey
1/4 cup of balsamic vinegar
1/4 cup of MCT oil (or extra virgin olive oil)
salt and pepper to taste

In a small bowl or jar, add in all of your ingredients and whisk away until well combined.  Add salt and pepper to taste.  Throw in the fridge for at least an hour prior to serving. 

This dressing will also work on a strawberry bruschetta.
