OK! So I posted a photo on Instagram the other day of these muffins and got a bunch of curious healthy TIU girls asking questions regarding what I used and how to make them. So while the recipe is extremely simple and I covered most of the questions over Twitter, I thought to share it on here to make it easier for you to find...
1 banana
1 whole egg
1/4 cup of almond milk (I used Unsweetened Silk Almond milk)
a pinch of salt
a pinch of cinnamon (optional, I add it to everything)
1/2 cap full of vanilla extract (optional)
1 tbsp. of ground flax seeds
2 scoops of PerfectFit protein powder
1/2 cup of any berry you have at hand
Directions:
Preheat your oven at 375 degrees and spray a cupcake tray with baking spray (do not skip this step.) On a measuring cup measure out your milk, add in your egg, salt, vanilla and ground flax seed. Mix and combine the mixture well and set aside. In a bowl, mash your banana, add in your favorite berry and your protein powder. Add in your egg and milk mixture to the bowl and mix until well combined with a fork or a whisk (I used a fork.) Add in your mixture to your sprayed cupcake tray, filling each cupcake spot 1/2 way. Place tray in the preheated oven and bake for 30-35 minutes (depends on your oven.) Let the muffins cool for about 5 minutes. You may want to loosen up the edges with a butter knife or a spatula.
That's it!
This mixture will make about 9 muffins. There are 3 people in my household so we will each have 3. Ideally, I would love to take the selfish route and make this my breakfast for the next 3 days. ;o) DOUBTFUL, since hubby and son attacked them 5 minutes after these photos were taken!! LOL
Someone asked on Twitter if they could incorporate this into the ToneItUp slim down plan... After, looking through the ingredients, I believe you could if you stick to the pancake recipe, you can read how I baked that here. I would suggest using the egg white of an egg rather than egg-whites substitute, as well as using baking spray other wise they will stick to your tray.
