Workout & a Clean Thanksgiving Meal

The workout...
Thanksgiving plate...
 The sides...
Green beans, whole grain couscous, mashed cauliflower, turkey gravy and rhubarb jam...
 The gravy...
Ingredients:
2 tbsp. of olive oil
1/4 cup of whole wheat flour
2 cups of turkey broth
1/2 onion diced
2 celery stalks diced
1/2 tbsp. of poultry seasoning
salt and pepper to taste

Directions:
Preheat a medium sauce pan to medium heat.  Add in the oil, onion and celery in to the pot. Cook veggies and stir until onion is translucent.  Add in your turkey broth and poultry seasoning, stir.  Add in your flour and whisk the mixture until it thickens, about 5-10 minutes.  Add in salt and pepper to taste.   Removed gravy from heat and let it cool for about 3-5 minutes prior to serving.

Mashed cauliflower...
What I used:
1 head of cauliflower (clean and boil in water for 20 minutes)
3 tbsp. of dry cilantro
1/4 t. of poultry seasoning
1 oz. of low sodium chicken stock
salt and pepper to taste

I combined all of the above ingredients and mashed away...;o)
 The Turkey...
Hubby got a 27 pounder....Feeeewww, needless to say we'll have turkey lunches and dinners all week long.  The turkey took 5 hours to cook and since hubby worked last night we had our Thanksgiving meal for lunch. 

Turkey Marinade...
 1/2 cup of apple cider vinegar
 1/4 cup of MCT oil
3 tbs. of minced garlic
1 tbsp. of fresh thyme
1 tbsp. fresh rosemary
1 tbsp. fresh oregano
1 tbsp. poultry seasoning
1 tbsp. of pepper
 sea-salt to taste

 I combined all of the above ingredients and let the mixture alone for about an hour to allow the herbs and flavor to get friendly.  Gave it a taste adjusted the salt and pepper.  Since everything tastes better when seasoned the night before, I decided to seasoned the turkey with 3/4 of the mixture Wednesday night to allow it to marinate overnight. I added the rest of the mixture before placing the turkey in the oven as well as a little extra salt, pepper and poultry seasoning on Thursday morning.
The turkey was so moist and delish. It was definitely the star of our Thanksgiving meal!
