2 for 1: Balsamic Cucumber Salad & Pesto Pizza

I have had little to no time lately to slave in the kitchen to make an elaborate meal.  I work a full time job, I am also a wife and a mother.  This is why I rely on simple meals like these to get me through the week.  I hope you find them helpful.

Balsamic Cucumber Salad
 
Ingredients:
1 whole cucumber (cut in cubes)
2 tbsp. of a good balsamic vinegar
1/2 t. of ground thyme
salt and pepper to taste

Directions:
Cut your cucumbers into bite size pieces, and combined the rest of your ingredients in a mixing bowl.  Give it a taste and adjust the salt and pepper to taste.

Pesto Pizza

Ingredients:
1 slice of provolone
1 slice of Swiss cheese
1 Heaven Mills pita bread
2 tbsp. of homemade pesto

Directions:
Preheat your oven at 350 degrees.  On your pita bread spread the pesto over top.  Cut your cheese in to long strips and add it to your pizza.  Bake for 15-20 minutes or until the cheese is melted.
