Refrigerated Overnight Quinoa Oats

OK!  I know you have seen these all over Pinterest and pretty much every single food blog out there.  I just had to give them a try!  I have to say that WE are now fans of the refrigerated overnight "oats" concept.  It is such a great time saving breakfast idea! It truly takes minutes to prepare and no babysitting required.

Here is my version of the good ol' Overnight Oats..

Overnight Quinoa Oats!!!
Ingredients:
1/4 cup of Quinoa Flakes
1/4 cup of Old fashion Oats
1 tbsp. of chia seeds
3/4 cup of Unsweetened Chocolate Almond Breeze
5 drops of vanilla liquid stevia
  a pinch of ground cinnamon
  a sprinkle of ground nutmeg

Directions:
Super easy!  Pour your ingredients into any bowl or cup, stir and refrigerate over night. That is it!

The essential ingredient to determine the consistency of your flakes are the chia seeds.  I thought a tablespoon of chia was perfection but, you can certainly play with it by adjusting the amount your put in.  You can also adjust the amount of milk you put in.

There are so many variations of these out there; you can use water or greek yogurt instead of almond milk!  I added a little twist to the popular recipe by adding quinoa flakes instead of just a serving of old fashion oats.

Feel free to add in a tablespoon of pumpkin puree for a fall inspired version of these, or a serving of dry or fresh fruit, nuts, agave, almond butter, jam, carob chips or anything you wish!

If you are as skeptical as I was about eating cold "oats", I encourage you to try them!  Try them, TRY it!
If you are not a fan of cold cereals, throw them in the microwave for a couple of minutes before digging in, for a hot breakfast!

Enjoy and share them with a loved one, they'll love it too!
