Purple Chicken Salad

Simple, delicious and colorful salad! 
What I used:
1 whole purple cabbage - chopped
1 large leek - diced
1 tbsp of minced garlic
1 tbsp of MCT Oil (or coconut oil)
3 tbsp of Bragg's Aminos
2 grilled chicken breast-shredded
salt & pepper to taste
1/4 t. + a sprinkle of ground ginger
1 tbs of pumpkin seeds

Directions:
Start out by sauteing your diced leeks and garlic in a large skillet at medium-low heat with the oil.  Season your leeks with salt and pepper and a sprinkle of ginger.  When your leeks are semi-cooked (after 5 minutes or so) add in the cabbage and season again with salt and pepper and a sprinkle of ginger.  Saute for another 5 minutes.  Add in the chicken and aminos.  Continue sauteing for another 3-5 minutes.  Turn off your burner and serve.  Add in pumpkin seeds for a little crunch.  Garnish with a sprinkle of sesame seeds.

This was dinner for us last night but, this salad could serve as the perfect side dish for Thanksgiving dinner!
