I have mentioned many times that I do not throw away my veggie pulp. I refuse to let it go to waste. I am always experimenting with it and love finding more and more ways to utilize my pulp.
Here is what I did with some of my Veggie Cocktail juice pulp.
In my Chocolate Pudding...
- 1 cup of veggie pulp
- about 4 leaves from broccoli stems
- a banana
- 2 tbs of unsweetened cocoa powder
- 1 1/2 tbsp of raw honey
- 1 cup of water
- a pinch of cinnamon
I threw everything in my blender and mixed at medium speed for about 4 minutes. I placed the mixture into pudding cups and refrigerated them for about 5 hours.
My son Christian loved, loved. LOVED this pudding!
