Chocolate Pudding

I have mentioned many times that I do not throw away my veggie pulp.  I refuse to let it go to waste.  I am always experimenting with it and love finding more and more ways to utilize my pulp.  
Here is what I did with some of my Veggie Cocktail juice pulp.


In my Chocolate Pudding...
  • 1 cup of veggie pulp 
  • about 4 leaves from broccoli stems
  • a banana
  • 2 tbs of unsweetened cocoa powder
  • 1 1/2 tbsp of raw honey
  • 1 cup of water
  • a pinch of cinnamon
Directions:
I threw everything in my blender and mixed at medium speed for about 4 minutes.  I placed the mixture into pudding cups and refrigerated them for about 5 hours.
 My son Christian loved, loved. LOVED this pudding!

  1. I only juiced twice and couldn't believe how much pulp was left behind. It felt like a sin tossing out all of that goodness. Now I know what to do with it.
