Black Bean Fig Spread

Ok, remember this photo from Sunday?
   Awww, a cute lil boy's hand... Anyway, hubby says it is a "GO"!

I received figs on my last Full Circle order and I have to admit that other than throwing them in my salads, oatmeal, celery boats, and smoothies (consuming them raw) I had no clue what I was going to do with them.  I like figs, but it is not a "go-to" fruit in our house we prefer good ol' apples, pears and grapes over them.  Also, the fact that my hubby and child only like figs in Fig-Newtons (or dehydrated), did not help the situation much.  I still had about a pound of them left, so I decided to make a spread out of them.

Black Bean Fig Spread
Here's what I used:
2 tbsp. of almond butter
12 oz of soaked & cooked black beans (or from a can, washed & drained)
about a pound of figs cut in half
2 tbsp. raw coconut nectar
1/4 cup of unsweetened apple sauce
the juice of 1/2 of an orange
about 1/4 cup of  water
1 cap full of vanilla extract
a pinch of cinnamon
1 tablespoon of orange zest
the leaves of 1 thyme stem
a pinch of sea-salt

In a saucepan at low-medium heat add in your figs with the water, vanilla extract, zest, orange juice, thyme and honey.  Let it simmer for about 5-10 minutes.  Turn off burner and let it cool. (BTW, you could totally stop at this point and convert this mixture into a jam by blending with a hand blender and storing in a mason jar.) Place the fig mixture with the rest of the ingredients listed above and blend at high speed in a blender for 3-5 minutes or until you get a smooth hummus like consistency.  Store mixture in to jars or plastic containers and refrigerate.
 Humble Tip: I recycle all my almond butter containers to store homemade hummus and granola
I used one of them to store my Fig spread.  
Chris' lunch consisted of a BB Fig Spread sandwich today and yesterday per his request! 
 Needless to say this spread was a HIT!
