Quick & Easy!
Here's what I used (makes 12 med size muffins:)
1 box of GF multi-purpose baking mix
a 15 oz. can of 100% pure pumpkin
1/4 cup of Unsweetened Almond Breeze
20 Truvia packs (or 1/2 cup of honey)
2 t. of baking powder
1 t. of cinnamon
1/2 t. of nutmeg
1/4 t. of ginger
1/4 t. of cloves
a pinch of sea salt
These spices are completely optional. I love cinnamon so I chose to make it my main spice. I feel nutmeg is too strong and tends to take over if you add to much.
I rarely separate the dry from the wet, I just kinda throw everything
together and mix. The one thing about recipes that do
not contain any eggs or oil, is that you can taste the mixture prior to baking. I'm not a fan of super sweet breads so 20 packs of Truvia was
perfect for me. I suggest you try them and add as you see fit. Honey
or agave nectar would be great on these!
Place mixture in muffin pan and bake for 15-18 minutes at 350 degrees. Let the muffins cool for about 5 minutes on a cooling rack prior to serving. That's it!
As I said this is such an easy and simple recipe.
To spice it up a bit more, feel free to add nuts, non-fat plain yogurt, eggs, dry fruits or chocolate/carob chips.

ReplyDeletehmmm, the all purpose gf baking mix does not have any sugar added, well, I like them with stevia. You could try substituting the pumpkin for 2 cups of mashed sweet-potato, or try it adding herbs to make it a savory muffin...Let me know if you end up making them without sweeteners. BTW, I love your Paleo PB&J invention...lol I love doing that as well! Thank you so much for stopping by! ;o)
