Day 6 of the WF-NC Challenge

Day 6 of the Whole Foods-No Crap Challenge starts with b-fast...Sweet potato and eggs.
Time saving tip-  I tend to reach for my microwave when cooking sweet potatoes.  For my sweet potato I punctured a few holes with a knife and threw in the microwave  on a paper towel for 2.15 seconds each side.   Total cooking time: 4.30 minutes.   
Had 1/4 piece for breakfast and 1/4 for lunch!

 Lunch consisted of more sweet potato, tuna, jalapenos, onion, brussels sprouts and green beans.
