Grapefruit Mint Salad Dressing

This dressing has been a staple on my couscous & quinoa salads for a little while now.  I love that you can work with any citrus and herb you have at hand.  My mint is thriving in my garden so it had to make an appearance in this delicious dressing.

the zest of one orange
the juice of 1 grapefruit
2 tbs of honey
1/4 cup of Extra Virgin Olive Oil
4 tbs of apple cider vinegar
1 shallot (diced)
salt & pepper to taste
about 20 leaves of fresh mint (chopped)

In a blender add in the orange zest, grapefruit juice, honey, oil, apple cider, diced shallot and salt and pepper to taste.  After your dressing is well mixed, add in your chopped mint leaves.  Refrigerates well for up to 4 days.

  1. That dressing sounds really refreshing. I had a pineapple- mint caipirinha this weekend and really enjoyed the mint in it. Might have to try this dressing out soon.
