Apricot-Lime Salad Dressing

Salads are an everyday thing in my house. I try to play around with dressings to spice up the salad trend we seem to be in lately.  My favorite salads always seem to have a Mexican twist to them, so I came up with an Apricot-Lime dressing. 


the juice and zest of one lime
1/4 cup of Extra Virgin Olive Oil
1 small apricot diced
1/2 cup of fresh cilantro leaves
1/2 of a small red onion (diced)
1 tbs of minced garlic
1 t. of cumin
2 tbs of apple cider vinegar
2 tbs of balsamic vinegar
2 tbs of water
salt & pepper to taste

In a blender mix all of the above ingredients for 1 minute.  If you feel the consistensy is too thick for you, you can add a few more tablespoons of water and blend for another 30 seconds.  Refrigerates for up to 4 days. 

This is the dressing I used on my 4th of July couscous.
