Memorial Day Weekend & Popsicles ;o)

I hope everyone had a great holiday weekend! My weekend included, a 5.3 k race (it was really 3.5 miles, but who's counting), a sleepover, & a BBQ with friends!

Very exciting!  Chris and I did our first 5.3K!  It was sponsored by RCN/Team in Training Mary Brunner & Peggy Sullivan all proceeds went to Leukemia/Lymphoma Society.

We headed out to Fairbanks, AK left the house at 7am (up at 4:30) to be able to make it to Pioneer Park in time for bib pick up and T-shirts. 


B-fast: Green Smoothie (1 cup of black coffee, 1 cup of chai tea, 1 tb of spirulina, 1 tbs of wheat grass, 2 cups of spinach, 1 tbs of wheat germ, 1 scoop of hemp protein, 1/2 cup of U. almond milk, 1/2 of a banana, 1/2 cup of raspberries 1 cup of ice)

1/2 cup of unsweetened almond milk and coffee

The race started at 10am, our goal was to complete the 5.3 k without stopping.  I'm very proud to say that I accomplished my goal and managed to be the 3rd female to reach the finish line!  I made it the Fairbanks Newspaper!  http://newsminer.com/view/full_story/18741163/article-Alder-wins-Statehood-5-3k?instance=home_sports_bullets

A little playtime!

Snack:  One of these...spinach & tomatoes sandwich (spinach, tomatoes, 1 tbs of tofutti cheese, 2 Ezekiel toasts) (after 5K)



Lunch:  We were rushing to get back to Delta so we decided to go to Fred-Meyers to pick up groceries and lunch, settled for their Salad & Sushi



We also made a pit stop for our favorite treat before heading home...


After this we headed home!  Let the sleep over begin!

OOOOH!  I also made Popsicle this weekend...
 
Here's what I used:

3/4 of a cup of unsweetened almond milk
2 frozen bananas
2 tbs of  raw almonds
1/2 cup of unsweetened coconut flakes
a pinch of cinnamon
a few drops of vanilla liquid stevia

Super simple, but delicious!  I blended the ingredients, threw the mixture in the Popsicle tray and froze over night. 

 As you can probably tell, I  indulged a little over the holiday weekend.  I have decided to continue with my slim down for another week.  I will let you know how that goes.  Have a lovely day!
